Cucumber And Beans Salad: A Simple and Nutritious Recipe


In the heat of summer, nothing beats a light, crisp, and refreshing salad. One of my go to recipes is a Cucumber and Beans Salad, which is not only delicious but also packed with nutrients. This salad is incredibly easy to make, requires minimal ingredients, and can be customized to suit your taste. Whether you're looking for a quick lunch, a side dish, or a healthy snack, this salad is a perfect choice.

Cucumbers are hydrating and low in calories, making them a great base for any salad. They add a satisfying crunch and a mild, refreshing flavor that pairs well with a variety of ingredients. Beans, on the other hand, are rich in protein, fiber, and essential vitamins and minerals. They add heartiness to the salad, making it more filling and nutritionally balanced.

Combining these two ingredients creates a salad that’s not only refreshing and light but also provides a good mix of carbohydrates, proteins, and healthy fats. Plus, the contrast between the crisp cucumbers and the soft beans makes for a delightful texture that keeps you coming back for more.

Ingredients:

  • French Beans - ½ Kg.
  • Cucumber - 2
  • Capsicum or Bell Pepper - 2
  • Vinegar - 1 tbsp.
  • Olive Oil - 2 tsps.
  • Salt - as needed
  • Pepper Powder - as needed


Method:

  • Wash and clean the beans and cut into long pieces.
  • Peel and cut the cucumber into big pieces.
  • Cut the capsicum into big pieces and remove the seeds. You can use yellow or red capsicums. I didn’t have them at home. So I have used the green ones.
  • In a pan heat a cup of water and add little salt.
  • When it boils, add the chopped beans and cook for 3 to 5 minutes and drain the water and keep aside.
  • You can use the water for making rasam or soup.
  • In a bigger bowl, take the vinegar, olive oil, salt and pepper and mix well.
  • Now add the half cooked beans, cucumber and capsicum and mix well so that it is coated well with the vinegar mixture.
  • Your healthy salad is ready.

Note:

  • You can also use chopped radish in this salad.
  • If you like your salad with a bit more crunch, try adding some chopped bell peppers, radishes, or even nuts like almonds or walnuts.
  • If you enjoy a bit of heat, add some chopped jalapeƱos or a sprinkle of chili flakes.
