Ingredients:

  • Urad dal (black gram) – 1 cup
  • Red chillies – 5 to 6 (adjust to your spice preference)
  • Ginger – ½ inch
  • Onion – 1 chopped finely
  • Asafoetida – a pinch
  • Salt to taste or 1 tsp.
  • Curry leaves – a handful
  • Water (for soaking and grinding)
  • Oil – 1 or 2 tsp. (for greasing the vadas)


Method:

  • Wash and soak urad dal in water for at least 4 hours. This step is crucial to ensure that the vadas turn out soft and fluffy.
  • Drain the soaked urad dal and grind it into a smooth paste along with red chilies in a grinder. Use as little water as possible while grinding.
  • Add salt, asafoetida, chopped curry leaves, finely chopped or grated ginger and chopped onion to the batter and mix well.
  • Preheat your air fryer to 350°F (180°C) for about 5 minutes.
  • Grease the air fryer basket.
  • Lightly grease your hands with oil. Take a small portion of the batter and shape it into a round vada with a hole in the center, just like the traditional Medhu Vada.
  • Place the shaped vadas in the air fryer basket, making sure not to overcrowd. Lightly brush each vada with oil.
  • Set the air fryer to 350°F (180°C) and air fry the vadas for about 20 minutes, turning them once midway through the cooking process. The vadas should turn golden brown and crispy.
  • Air Fryer Medhu Vada is best enjoyed when served hot. Serve it with coconut chutney or sambar for an authentic South Indian experience.
