Soya chunks, also known as meal maker, are a great source of plant-based protein and have a wonderful ability to absorb flavors. This South Indian-style Soya Chunks Kuzhambu is a flavorful and hearty gravy made with tamarind, spices, and coconut, perfect for pairing with steamed rice or idli.
Soya chunks is highly nutritional and full of rich proteins. A variety of delicious dishes could be prepared with the soya chunks be it pulao or gravy. Soya Chunks contain 54.2 grams of protein, which exceeds the amount of protein found in meats, eggs, milk and wheat. Ingredients:
- Soya Chunks – 1 cup
- Onion – 3
- Tomatoes – 3
- Green chillies – 3 to 4
- Red chilli powder – 1 tsp.
- Dhania powder – 1 tsp.
- Garlic pieces - 8
- Turmeric powder – ¼ tsp.
For Grinding:
- Grated coconut – ¼ cup
- poppy seeds – ½ tsp. (soaked in little hot water)
- Roasted gram or chutney dhal - 3 tsps.
For Seasoning:
- Oil – 2 tbsp
- Cinnamon stick – 1
- Cloves – 2
- Coriander leaves - a handful
Method:
- Boil water in a vessel and add the soya chunks and close the lid and switch off the stove.
- Keep it for 5 minutes and drain and wash again.
- Grind coconut, chutney dhal and poppy seeds to a smooth paste and keep aside.
- In a pan, heat oil and fry cinnamon and cloves.
- Now add finely chopped garlic pieces and fry till raw smell goes.
- Then add onions and fry well till it becomes transparent.
- Now add tomatoes and fry till it becomes mushy.
- Add turmeric powder, dhania powder , chilli powder and salt and mix well .
- Add 1 cup of water and boil for 1 minute.
- Add the ground coconut paste and add little water and boil till it thickens to a gravy consistency.
- Squeeze the soaked soya chunks well without water and add them to the gravy. Cook for some more time.
- Garnish with coriander leaves.
- You can serve this soya chunks gravy with chapathi or hot plain rice.
