Azhagar Kovil, a revered temple situated at the foothills of Alagar Malai, north of Madurai, is known not just for its spiritual significance but also for its unique and delicious prasadam – Azhagar Kovil Adai. This special Black Gram Dosai is a temple delicacy prepared with minimal yet flavorful ingredients, giving it a distinct taste and texture.
Azhagar Kovil is dedicated to Lord Alagar (Sundararajan), a form of Lord Vishnu. Devotees visiting the temple are blessed with a divine offering of this adai, which is made with urad dal (black gram) and raw rice, spiced with pepper, cumin, ginger, and curry leaves. The adai is cooked on an iron griddle, giving it a crispy and aromatic finish.
Azhagar Kovil Adai is a divine prasadam that has been offered at the temple for generations. Made with protein-rich black gram, it is highly nutritious and filling. The combination of pepper, cumin, and ginger enhances digestion and adds warmth to the dish.
Ingredients:
- Raw rice - 2 ¼ cups
- Black gram or Karuppu Uzhudhu - 1 cup
- Black pepper - 2 tsps.
- Cumin seeds - 2 tsps.
- Ginger - ¼ inch
- Curry leaves - a handful
- Ghee - for making adai
- Salt - as needed or 1 tsp.
Method:
- Wash and soak raw rice and black gram and soak them for 4 hours.
- Grind rice and dhal to a thin rava consistency. Do not add more water when grinding. The batter should be little thick only. At the end add salt and mix well. Let it ferment for 4 to 5 hours.
- In a mixie jar, add fresh ginger, pepper, cumin seeds, curry leaves and grind coarsely.
- Now add crushed masala paste and mix well thoroughly.
- Heat a dosa pan and spread the batter like we make for adai dosai.
- Add ghee and cook on both the sides till golden brown.
- Serve hot with coconut chutney.
