Oyster Mushroom / Sippy Kalaan Kurma


Oyster mushrooms (Sippy Kalan in Tamil) are not just a culinary delight but also a nutritional powerhouse. Ingredients:

  • Oyster Mushroom - 1 packet of 200 g.
  • Big Onion - 2
  • Big Tomatoes - 2
  • Chilly Powder - 1 tsp.
  • Dhania Powder - 1 tsp.
  • Coriander Leaves - 1 tsp.
  • Salt - as needed

For Grinding:

  • Grated Coconut - ½ cup
  • Ginger - 1 inch piece
  • Garlic pieces - 8
  • Cloves - 1
  • Cinnamon Stick - 1
  • Fennel Seeds - ¼ tsp.
  • Cardamom - 1

For Seasoning:

  • Oil or Ghee - 3 tsp.
  • Fennel Seeds - ¼ tsp.
  • Cinnamon Sticks - 1 inch piece
  • Curry Leaves - handful
  • Bay Leaf - 1

Method:

  • Clean and wash the mushrooms and cut into four pieces and keep aside.
  • Grind all the ingredients given for grinding to a smooth paste and Keep aside.
  • Heat oil in a pan, and when it is hot , add fennel seeds, cinnamon stick, bay leaf and curry leaves and fry this for a minute.
  • Add finely chopped onions and salt and fry for 2 minutes until it turns golden brown.
  • Add ground paste to it, fry this for 2 more minutes until raw smell goes.
  • Add finely chopped tomatoes and fry till tomatoes turns soft and mushy.
  • Now add Oyster mushrooms and fry this for another 2 minutes.
  • Add chilli powder and dania powder and fry for a minute.
  • Add 2 cups of water, salt and cook in low flame till it cooks well.
  • When it becomes thick, add chopped coriander leaves and mix well .
  • Serve hot with Idly, Dosa or plain rice.
