If you’ve ever thought bitter gourd is too bitter for your taste, it’s time to give it another try with a recipe that transforms this humble vegetable into a delicious and nutritious delight. Before diving into the recipe, let's appreciate why bitter gourd deserves a spot on your plate. Bitter gourd, or karela, is renowned for its health benefits. It's packed with vitamins A, B, and C, and is a great source of iron, magnesium, potassium, and dietary fiber. It has been traditionally used in Ayurvedic medicine to manage diabetes, improve digestion, and boost immunity
I use bitter gourd regularly in my home and I make it a point to use once a week. For this recipe I have used the small bitter gourd called midhi pavakkai.
Ingredients:
- Small Bitter Gourd - 6
- Turmeric Powder - ¼ tsp.
- Coriander Powder - 2 tsp.
- Ginger Garlic Paste - 1 tsp.
- Chilli Powder - 1 tsp.
- Oil - 2 tbsp. for frying the bitter gourd
For Seasoning:
- Cumin Seeds - 1 tsp.
- Fennel Seeds - 1 tsp.
- Oil - 2 tsp.
Method:
- Wash and clean the bitter gourd and then make a long slit without fully cutting the bitter gourd.
- Chop the onions finely and keep aside.
- Heat oil in a pan and add cumin seeds and fennel seeds.
- When it turns colour, add the chopped onions and fry till it becomes transparent.
- Now add the ginger garlic paste and fry for a minute.
- Add turmeric powder, coriander powder, chilli powder and salt and cook till the raw smell goes off and switch off the stove.
- Let it cool down.
- Now take the bitter gourd and stuff the masala inside and steam cook the bitter gourd for 5 minutes.
- In a pan, heat oil and add the half cooked bitter gourd and keep in low flame and fry by turning once in a while. Be careful while turning.
- Cook till the bitter gourd is fried well and remove from the stove.
- This stuffed bitter gourd can be served with rice or rotis.
