Brinjal Varuthu Araicha Kuzhambu


Brinjal Varuthu Araicha Kuzhambu is a traditional Tamil Nadu delicacy that brings out the rich and earthy flavors of brinjal (eggplant). This aromatic curry, made with freshly roasted and ground spices.

“Varuthu Araicha” translates to “roasted and ground,” indicating the unique preparation method that involves roasting spices and then grinding them to a fine paste. This technique imparts a distinct depth of flavor to the curry, making it stand out among other kuzhambu varieties.

Brinjal, known for its versatility and ability to absorb flavors, serves as the perfect main ingredient in this dish. The use of brinjal not only adds a subtle sweetness but also a satisfying texture, balancing the robustness of the spices.

This is one of my special dish which I make often.

Let us see how to make this kuzhambu.

Ingredients:

  • Brinjal - 3 (medium sized)
  • Small onions - 10 to 15
  • Tamarind - Small lemon sized
  • Tomatoes - 2
  • Salt - as needed
  • Turmeric Powder - ¼ tsp.
  • Chilli Powder - ¼ tsp.
  • Dhania Powder - 1 ½ tsp.

For Grinding:

  • Grated Coconut - ½ cup
  • Ured Dhal - 2 tsp.
  • Red Chillies - 4
  • Poppy Seeds - 1 tsp.
  • Small Onions - 10

For Seasoning:

  • Oil - 2 tbsp.
  • Mustard Seeds - 1 tsp.
  • Asafoetida - A pinch
  • Red Chillies - 1
  • Curry Leaves - a handful


Method:

  • Soak tamarind in 1 cup of hot water and take tamarind juice after 10 minutes.
  • Cut brinjal into small pieces.
  • Fry all the ingredients given for grinding in little oil. And grind them in a mixer once it cools down into a smooth paste.
  • Heat oil in a pan and add mustard seeds.
  • When mustard seeds splutters, add the remaining ingredients for seasoning.
  • Add small onions and brinjal and fry for a few minutes till onion turn transparent.
  • Then add finely chopped tomatoes and fry for some more time.
  • Now add the turmeric powder, chilli powder, coriander powder and needed salt.
  • Add tamarind water and the ground paste and cook till the kuzhambu thickens.
  • Serve hot with cooked rice.

Serving Suggestions:

Brinjal Varuthu Araicha Kuzhambu pairs beautifully with steamed rice. A dollop of ghee on hot rice with this kuzhambu can be truly delightful. It can also be served with dosa or idli for a comforting South Indian meal.
