Mangalore Bonda / Goli Baje


Mangalore Bonda, also known as Goli Baje or Mangalore Bajji, is a popular South Indian snack that hails from the coastal region of Karnataka. These crispy, golden fritters are made from a simple batter of all-purpose flour (maida), yogurt, and spices, deep-fried to perfection. Perfect for tea-time, Mangalore Bonda is a delightful treat that is crispy on the outside and soft on the inside. 
It tastes well when it is hot. 

Ingredients:

  • Maida – 1 cup
  • Sour Curd – ½ cup
  • Rice Flour – ½ tbsp.
  • Finely Chopped Ginger – 1 tsp.
  • Finely Chopped Green Chillies – 2
  • Curry Leaves – a handful (chopped finely)
  • Grated Coconut – 1 tbsp.
  • Water – for mixing the dough
  • Salt – as needed or 1 tsp.
  • Baking Soda – ¼ tsp. (optional)
  • Oil – for deep frying the bondas


Method:

  • In a bowl add maida, rice flour , curd, chopped ginger, green chillies, curry leaves, grated coconut and salt and mix well.
  • You can also add baking soda if you are using. I have not added baking soda.
  • Add water little by little and mix well. The batter should be thick.
  • Cover and keep aside for 3 hours.
  • Heat oil in a pan for deep frying.
  • When the oil is hot, add small balls of the batter and fry golden brown on both the sides. The oil should be kept medium hot when frying. Otherwise inside will not be cooked well.
  • Drain the bondas in a colander.
  • Serve hot with coconut chutney.
