Bitter Gourd Curry / Pavakkai Porial


Bitter gourd is one of the healthiest vegetable. It is rich in fiber and is good for people with diabetes. Even though bitter gourd tastes bitter it has lots of essential nutrients and anti-oxidants. Bitter gourd is beneficial for people who have asthma, cold and cough. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese and iron. Bitter gourd is an extremely rich source of vitamin C, which helps boost immunity. It also has powerful antiviral property, which stimulates the immune system and also aids in digestion.

Pavakkai Porial is a testament to the magic that can be created in the kitchen with simple ingredients and traditional techniques. It’s a dish that not only tantalizes the taste buds but also offers numerous health benefits.

This recipe is a simple one in which we cook bitter gourd and add coconut paste and tamarind.

Ingredients:

  • Bitter gourd - 1 big
  • Oil - 4 tsp.
  • Ured dhal - 1 tsp.
  • Mustard seeds - ½ tsp.
  • Turmeric powder - ¼ sp.
  • Asafoetida - A pinch
  • Curry leaves - A handful
  • Tamarind - Small lemon sized
  • Salt - As needed
  • Water - 1 cup
  • For Grinding:
  • Grated coconut - ½ cup
  • Red chillies - 2


Method:

  • Wash and finely chop the bitter gourd and then deseed them.
  • Soak tamarind in hot water ad extract tamarind juice and keep aside.
  • Soak them in salt water for about 15 minutes. You can add water and a teaspoon of salt.
  • In a pan, heat oil and add mustard seeds.
  • When the mustard seeds splutter, add the ured dhal and fry till it turns golden brown.
  • Now add the curry leaves and fry for a minute.
  • Drain the water and add the chopped bitter gourd and fry for 2 minutes.
  • We can now add water and turmeric powder and boil.
  • When the water boils, keep in simmer and cook bitter gourd till it becomes soft.
  • Now add salt and tamarind extract and cook till the water is completely dry.
  • In the meantime grind the grated coconut and red chilies and grind. The coconut and red chilli will be coarse.
  • Add this mixture to the cooked bitter gourd and mix well for 2 minutes and switch off the stove.
  • Serve hot with cooked rice.
